New Day…Fresh Start

Today is a new day. Either keep working toward your goal or start today. No matter where you are, a new day gives you hope, a fresh start and new thoughts. Open your eyes, mind and heart today to all that awaits you.

Plan your day. Think about what you will be eating and when you will exercise. If you haven’t added strength training to your routine yet, plan a time when you can. Even if you aren’t comfortable with the exercises in the last post, take the time to learn and practice them. It will get more comfortable as you go. We all need resistance training to BE and FEEL stronger, for a stronger back and core, to lose weight, and for better balance and more. Reach out to me if you need more guidance getting started. Baked Eggs in Avocado

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Crack the eggs into a bowl, being careful to keep the yolks intact.
  3. Arrange avocado halves in a baking dish, resting them along the edge so avocado won’t tip over. Gently spoon 1 egg yolk into the avocado hole. Continue spooning egg white into the hole until full. Repeat with remaining egg yolk, egg white, and avocado. Season each filled avocado with chives, parsley, sea salt, and pepper.
  4. Gently place baking dish in the preheated oven and bake until eggs are cooked, about 15 minutes. Sprinkle bacon over avocado.

Grilled Vegetable Salad

SALAD INGREDIENTS

  • 1 lb zucchini (2 medium), halved lengthwise, ends removed
  • 1 lb yellow squash (2 medium), halved lengthwise, ends removed
  • 1 lb large asparagus spears
  • 2 ears sweet yellow corn, shucked and cleaned
  • 2 tbsp extra virgin olive oil
  • 1 pint cherry or grape tomatoes, halved
  • 2 cups green lettuce, shredded
  • 1/4 cup chopped fresh basil leaves

DRESSING INGREDIENTS

  • 1/4 cup chopped fresh basil leaves
  • 2 tbsp fresh lemon juice
  • 1 tbsp mayonnaise
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/4 cup extra virgin olive oil

OPTIONAL TOPPINGS

  • Chopped ripe avocado, sliced grilled chicken breast, or crumbled feta cheese
